Whole Wheat Fluffy Pancakes with Simple Berry Sauce

The first thing I crave every morning is a stack of fluffy pancakes but somehow never have the time or effort to make them. Lucky for me, I discovered this “one-bowl one-pan” pancake recipe. It’s pretty self-explanatory but it basically means that other than the measuring tools, the entire recipe can be made with using only one bowl and one pan. No separating dry and wet ingredients!
You may be a little uneasy about the whole wheat part of this recipe since it can often add a gritty, hard to swallow texture to food. In this recipe, I made a slightly healthier version of the classic pancake without compromising the taste by using a combination of white all-purpose flour and whole wheat flour.
These pancakes taste fantastic topped with fresh fruit, yogurt, or syrup but today, I decided to put the frozen fruit we already had in the freezer to good use! This simple 3 ingredient sauce can be made in the same pan as the pancakes for an easier cleanup (you’re welcome mom)!

Whole Wheat Pancakes

Makes 12 pancakes (4 servings)

Ingredients:

1 cup all purpose flour

1/2 cup whole wheat flour

3 1/3 teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 1/4 cups milk

1 egg

3 tablespoons oil

Directions:

  1. In a large bowl combine flours, baking powder, salt, and white sugar.
  2. Form a well in the middle of the dry ingredients and add remaining milk, egg, and oil.
  3. Using a large whisk, whisk together batter until smooth. It should be a thick consistancy.
  4. Heat up a pan on medium low heat and scoop 1/4 cup of batter. Cook on one side until it easily lifts off the pan and flip. Cook remaining pancakes.

Simple Berry Sauce

Yields enough sauce for 12 pancakes.

Ingredients:

1 cup frozen mixed berries (I used a blend of chopped strawberries and blueberries)

1/4 maple syrup

splash of water

Directions:

  1. Combine all ingredients on pan used to cook pancakes and simmer until thickened. Serve with pancakes.
